Growing up I ate hush puppies every Sunday afternoon with my grandma for lunch. I'm sure we ate something else. . . but all I remember are the hush puppies. : )

These aren't exactly the hush puppies I grew up with, but that's ok. I traded the yummy, unhealthy friedness for some honey.

Baked Honey Hush Puppies by Raia's Recipes

{Baked Honey Hush Puppies}
Gluten, Dairy, Egg & Refined Sugar Free

1 c. masa harina (or regular corn meal would probably work)
1/3 c. brown rice flour
1/3 c. sorghum flour
1/3 c. tapioca flour
1/2 t. xanthan gum (or a little more of guar gum)
1 T. baking powder
1/2 t. kosher salt
1/4 c. coconut oil
2 t. flax meal
3/4 c. coconut milk (here's how to make your own)
1/3 c. honey

Preheat oven to 425 and grease the bottom of a muffin tin or a baking dish. In a large bowl, whisk together dry ingredients, except the flax meal. In a liquid measuring cup, melt the coconut oil. Add in the flax meal, coconut milk, and honey. Pour into dry ingredients and mix well. Take golf-ball sized portions of dough and roll into balls. Place in prepared dish and bake for about 15 minutes, or until golden on top. Serve with fried chicken and baked beans. . . . whatever, just eat them right away. : )
