Nice green tinted sour cream, eh? Yeah. . . . my camera has been doing death-defying acts with the help of my four-year old. : p
6 small potatoes, diced
1 small onion, minced
1 clove garlic, crushed and minced
2 c. ham, cooked and diced
pepper and salt, to taste
1 t. dried oregano
3 T. oil
Heat the oil in a skillet over medium heat. Add potatoes and fry for about 10 minutes. Add onions, garlic, salt and pepper. Fry for about 15-20 minutes longer, or until potatoes are tender. Add ham and oregano and fry a few more minutes. Serve with a dollop of sour cream if you can handle dairy.
Makes 3-4 servings.
