Buttermilk Banana Muffins {Gluten, Egg & Sugar Free}

2 T. flax/chia meal
1/4 c. + 2 T. hot water
1/2 c. milk
2 t. apple cider vinegar
1 c. rice flour
1/2 c. arrowroot powder
1/2 c. cornstarch
1 t. baking soda
2 1/2 t. baking powder
1 t. guar gum
2 t. cinnamon
1/4 t. nutmeg
1/4 t. cloves
2 large bananas
1/2 c. applesauce

Preheat oven to 400 and grease a muffin pan. Combine flax meal and let stand until gelled. Combine milk and apple cider vinegar and let stand until curdled. In large bowl whisk together dry ingredients. In separate bowl, mash bananas. Add applesauce, flax mixture and "buttermilk". Stir to combine and pour into dry ingredients. Mix well and drop 1/3 cupfuls into prepared pan. Bake for 20 minutes, or until top is golden and firm.
